Our Wholly Cow platform supports nose to tail eating and is a great way to make sure we use the whole animal. There are 15 shares per cow share so we have to wait for all shares to be sold before we can organise the butchery and delivery date. Why not invite a friend to try our cow share too?
This beef is organically raised and is 100% grass fed from birth to slaughter. These animals are managed within a regenerative farming system, always with an emphasis on protecting biodiversity of the natural environment, alongside low stress handling, which in turn produces a premium quality meat. The shares of each cow will take up approximately two drawers of the average freezer.
After a cold store dry ageing has occurred to tenderise the meat and enhance the flavour even further, the highly skilled butcher will cut the order to our specification and the boxes will be sent by 24 courier to your door. The meat will arrive chilled ready to cook or freeze. All cuts will be labelled clearly.
This is a great opportunity to directly support Model Farm, one of the innovative farms we are working with, who are managing their land regenaratively and rearing their livestock to the very highest level of animal welfare. Model Farm is home to a herd of 270 Hereford Beef Cattle and 400 Easy care ewes on sustainably managed grassland and forage crops. Simon’s cattle and sheep are 100% pasture fed and receive NO grains. Model Farm is managed to soil association standards for Organic status, the land receives no in-organic fertilisers or sprays and a forage crop rotation system produces natural organic foods for any winter feeds required.
The cuts are as follows, but can vary:
1 x 2kg silverside or topside roasting joint.
1 x 1.5kg slow roast joint.
1 x pack of two sirloin steaks.
1 x pack of two fillet steaks
1 x pack of two rib-eye/sirloin steaks (please ask for preference)
2 x 500g flank/rump steak
2 x 500g packs of minced beef
2 x 500g packs of diced beef
