About the farm:
We have partnered with Boyd Farm to bring you our latest Cow Share. Boyd Farm has an Organic Pedigree Hereford suckler herd which are used specifically to manage 100 ha of Species-Rich Calcareous Grassland, created as part of a Higher Level Stewardship Scheme. The cows, calves, yearlings and two-year olds are kept as a big family group and out-wintered on the thin Cotswold Brash soils, supplemented only by late-cut hay from wild flower meadows.
The farm has recently won awards from the Farming & Wildlife Advisory Group, Royal Society for the Protection of Birds and Glos Wildlife Trust and is a demonstration farm for Natural England. Their high quality meat is due to Pasture for Life, Organic, Grass-fed year round, no grain feed, rich in Omega 3 and dry aged for 4 weeks.
About the meat:
Hereford beef is MARBLED – small amounts of intramuscular fat runs through the meat which increases flavour and tenderness. Their slow growth will also add to this exceptional quality. All the meat is DRY-AGED – this means the meat is hung for a minimum of 28 days in a large refrigerator with fans. This removes a lot of the moisture whilst the carcass is hanging resulting in better flavour and your joints and steaks won’t shrink when cooked. The meat has a greater fat cover than commercial beef which allows the meat to benefit from hanging longer to provide greater tenderness and flavour.
The beef is VACUUM-PACKED, as the air has been removed from the packaging, the meat will stay fresh for up to 10 days in your refrigerator providing it is kept between 0-3 degrees C. The fresh mince needs freezing after 5 days as it has been through a machine. All meat intended for freezing should be frozen as soon as possible after purchase. The quality of the meat is the same whether it is cooked from fresh or frozen. Once unfrozen, meat must not be refrozen.
The cuts (please note this can vary):
- 1 x piece of fillet for 2 (approx. 400g) OR 1 x packet of 2 rib-eye steaks (approx. 500g)
- 1 x packet of 2 Rump steaks (approx. 500g)
- 1 x packet of 2 Sirloin steaks (approx. 500g)
- 2 x Braising steak, sliced in approx. 500g (1kg in total)
- 1 x Diced beef (approx. 500g)
- 1 x Shin (approx. 500g)
- 3 x minced beef approx. 500g (1.5kg in total)
- 1 x 1kg slow roast joint (brisket, chuck roast or LMC, Jacobs ladder)
- 1 x 1.5kg – 2kg roasting joint (topside, silverside to top rump)
- 1 x marrow bone
This cow share is due to be delivered on 6th December but this will be confirmed closer to the time. Shipping is included in the price.
